Ingredients (serves 6):

- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 1 pound andouille sausage, sliced
- 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
- 6 cups chicken broth
- 1 can diced tomatoes, drained
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper, to taste
- 1 pound large shrimp, peeled and deveined
- 1/4 cup chopped fresh parsley
- Cooked white rice, for serving

To make Louisiana-Inspired Gumbo, start by making a roux. Heat the vegetable oil in a large Dutch oven over medium heat. Add the flour and whisk constantly until the mixture turns a dark brown color, about 20-25 minutes. Be careful not to burn the roux.
Add the onion, bell pepper, celery, and garlic to the pot and cook until the vegetables are soft, about 5-7 minutes. Add the andouille sausage and chicken and cook until the chicken is browned on all sides, about 5-7 minutes.
Add the chicken broth, diced tomatoes, Worcestershire sauce, hot sauce, thyme, oregano, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
Add the shrimp to the pot and cook until they turn pink, about 5-7 minutes. Stir in the chopped parsley.
Serve the Louisiana-Inspired Gumbo over cooked white rice. Enjoy!
