Lentil Sloppy Joes are a delicious and healthy twist on the classic American sandwich. This vegan recipe is packed with protein and fiber, making it a satisfying meal for any time of day. To make four servings of Lentil Sloppy Joes, you will need:
- 1 cup of dried green or brown lentils
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, chopped

- 2 tablespoons of tomato paste
- 2 tablespoons of maple syrup
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cumin

To start, rinse the lentils and cook them in a pot of boiling water for about 20 minutes, or until tender. Drain and set aside. In a large skillet, sauté the onion, garlic, and red bell pepper until softened. Add the cooked lentils, tomato sauce, tomato paste, maple syrup, apple cider vinegar, smoked paprika, cumin, salt, and pepper. Stir well and let simmer for 10-15 minutes, until the sauce has thickened.
To serve, toast the whole wheat buns and spoon the lentil mixture onto each one. The Lentil Sloppy Joes should be hot and saucy, with a slightly sweet and smoky flavor. This dish is perfect for a quick and easy weeknight dinner, and can be customized with your favorite toppings like avocado, pickles, or vegan cheese.
