Kimchi Jjigae

- 1 cup of kimchi
- 1/2 onion, sliced
- 2 cloves of garlic, minced
- 1/2 cup of pork belly, sliced
- 1/2 cup of tofu, cubed
- 2 cups of water
- 1 tablespoon of gochujang (Korean chili paste)
- 1 tablespoon of gochugaru (Korean chili flakes)
- 1 tablespoon of soy sauce
- 1 tablespoon of sesame oil
- Salt and pepper to taste
To start, heat a pot over medium-high heat and add the pork belly. Cook until browned and crispy, then add the onion and garlic. Cook until the onion is translucent.
Next, add the kimchi and cook for a few minutes until it starts to soften. Add the gochujang, gochugaru, soy sauce, and water. Bring to a boil and then reduce the heat to low. Let the stew simmer for about 10 minutes.
Add the tofu and sesame oil and cook for another 5 minutes. Season with salt and pepper to taste.
