Ingredients (serves 4):

- 1 lb beef, cut into bite-sized pieces
- 4 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and sliced
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 bay leaves
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper to taste
- 4 cups water
- Fresh parsley for garnish


Cooking tips:

- Use a heavy-bottomed pot or Dutch oven to cook the stew.
- Brown the beef in batches to ensure it is evenly cooked and develops a nice crust.
- Add the potatoes and carrots towards the end of the cooking process to prevent them from becoming mushy.

Instructions:

3. Add the beef back to the pot, along with the bay leaves, paprika, cumin, coriander, salt, and pepper. Stir to combine.
4. Pour in the water and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for 1 hour.
5. Add the potatoes and carrots to the pot and continue to simmer for another 30 minutes, or until the vegetables are tender.
6. Remove the bay leaves and discard. Serve the Khashlama hot, garnished with fresh parsley.
