Hong Shao Rou

To make Hong Shao Rou, you will need the following ingredients:

- 6 cloves garlic, minced

To start, heat the vegetable oil in a wok or large pot over medium-high heat. Add the pork belly and cook until it is browned on all sides. Remove the pork from the pot and set it aside.
In the same pot, add the garlic, ginger, star anise, cinnamon sticks, and dried red chilies. Cook for a few minutes until fragrant. Add the soy sauce, Shaoxing wine, and brown sugar, and stir until the sugar has dissolved.
Add the pork back into the pot and stir to coat it in the sauce. Add enough water to cover the pork, and bring the mixture to a boil. Reduce the heat to low and let the pork simmer for 1.5-2 hours, or until it is tender and the sauce has thickened.
Once the pork is done, remove it from the pot and set it aside. Skim any excess fat from the sauce and let it simmer for a few more minutes until it has thickened to your liking.
To serve, place the pork on a platter and pour the sauce over it. Garnish with sliced scallions and serve with steamed rice.
