Gheimeh Bademjan

To make Gheimeh Bademjan, you will need the following ingredients:

- 1 pound beef stew meat, cut into small pieces
- 2 medium eggplants, peeled and diced
- 1 cup yellow split peas, soaked overnight
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tomato paste
- 2 cups water
- 1/4 cup vegetable oil


To start, heat the vegetable oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
In the same pot, add the onion and garlic and sauté until softened. Add the turmeric, cinnamon, cumin, salt, and black pepper and stir to combine. Add the tomato paste and cook for a few minutes until fragrant.
Add the beef back to the pot, along with the soaked yellow split peas and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
While the beef and split peas are cooking, heat a separate pan over medium-high heat. Add the diced eggplant and cook until browned on all sides. Remove from the pan and set aside.
After the beef and split peas have simmered for 1 hour, add the cooked eggplant to the pot and continue to simmer for an additional 30 minutes.
Serve the Gheimeh Bademjan hot, garnished with fresh herbs and a side of rice.
