Ingredients (serves 4):

- 1 block of firm tofu, cut into small cubes
- 1/2 lb ground pork
- 2 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
- 2 tbsp soy sauce
- 1 tbsp fermented black beans
- 1 tbsp ginger, minced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- 2 green onions, chopped
- 1 tbsp cornstarch
- Salt to taste


To start, heat the vegetable oil in a wok or large skillet over medium-high heat. Add the Sichuan peppercorns and stir-fry for about 30 seconds until fragrant. Add the ground pork and stir-fry until browned. Add the chili bean paste, fermented black beans, ginger, and garlic, and stir-fry for another minute.
Add the chicken broth and bring to a boil. Add the tofu cubes and gently stir to combine. Reduce the heat to low and let simmer for about 5 minutes.
In a small bowl, mix the cornstarch with 2 tbsp of water to make a slurry. Add the slurry to the wok and stir gently until the sauce thickens. Add salt to taste.
