- 1 can chickpeas, drained and rinsed
- 1 head garlic, roasted
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
For the wrap:
- 4 whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup crumbled feta cheese
Instructions:
1. To make the falafel, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper in a food processor. Pulse until the mixture is well combined but still slightly chunky.
2. Add the flour and baking powder to the mixture and pulse again until well combined.
3. Heat the olive oil in a large skillet over medium-high heat. Form the falafel mixture into small balls and flatten slightly. Cook the falafel in the skillet for 2-3 minutes on each side, until golden brown and crispy.
4. To make the roasted garlic hummus, combine the chickpeas, roasted garlic, tahini, lemon juice, olive oil, salt, and pepper in a food processor. Pulse until the mixture is smooth and creamy.
5. To assemble the wrap, spread a generous amount of the roasted garlic hummus onto each tortilla. Top with shredded lettuce, diced tomatoes, diced cucumber, crumbled feta cheese, and 3-4 falafel patties.
6. Roll up the tortilla tightly and serve immediately.
