- 1/4 cup soy sauce
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper, to taste

Cooking Tips:

- Use bone-in and skin-on chicken thighs for the best flavor and texture.
- Make sure to slice the vegetables thinly and evenly so that they cook evenly.
- Adjust the amount of gochujang to your desired level of spiciness.
- Serve with steamed rice and garnish with sliced green onions and sesame seeds.
Instructions:

1. In a large pot or Dutch oven, heat some oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
2. In the same pot, add the onion, carrots, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
3. Add the garlic and ginger and cook for another minute, until fragrant.
4. In a small bowl, whisk together the soy sauce, sugar, sesame oil, gochujang, cornstarch, and water.
5. Add the chicken back to the pot and pour the sauce over the chicken and vegetables. Bring to a boil, then reduce the heat to low and simmer for 30-40 minutes, until the chicken is cooked through and the sauce has thickened.
6. Season with salt and pepper to taste. Serve hot with steamed rice.
Appearance and Taste:
Dakjjim is a beautiful dish with vibrant colors from the vegetables and a rich, dark sauce. The chicken is tender and falls off the bone, and the sauce is savory and slightly sweet with a hint of spiciness from the gochujang. The vegetables add a nice crunch and freshness to the dish.
