- 4 carrots, peeled and cut into 1-inch pieces
- 4 potatoes, peeled and cut into 1-inch pieces
- 1 cup frozen peas
- 2 tbsp cornstarch
- 2 tbsp water
- Salt and pepper to taste

To start, heat the vegetable oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
In the same pot, add the onion, garlic, and ginger and cook until softened, about 3-5 minutes. Add the soy sauce, rice wine, brown sugar, beef broth, star anise, cinnamon sticks, and dried red chilies. Stir to combine and bring to a boil.
Add the beef back to the pot and reduce the heat to low. Cover and simmer for 1 1/2 to 2 hours, or until the beef is tender.
Add the carrots and potatoes to the pot and continue to simmer for another 30 minutes, or until the vegetables are tender.
In a small bowl, whisk together the cornstarch and water. Add the mixture to the pot and stir to combine. Cook for another 5-10 minutes, or until the sauce has thickened.
Finally, add the frozen peas and cook for another 5 minutes, or until the peas are heated through. Season with salt and pepper to taste.
