- 1/2 cup chopped red bell pepper
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- Salt and pepper to taste


Cooking Tips:

Instructions:

1. Preheat the oven to 350°F.
2. In a large skillet, sauté the onion, green and red bell peppers until they are soft and translucent.
3. Add the ground cumin, salt, and pepper to the skillet and stir well.
4. Add the enchilada sauce to the skillet and stir until it is heated through.
5. Take a tortilla and fill it with the sautéed vegetables and shredded cheese.
6. Roll up the tortilla and place it seam-side down in a baking dish.
7. Repeat with the remaining tortillas.
8. Pour the remaining enchilada sauce over the rolled-up tortillas.
9. Sprinkle the remaining shredded cheese over the top of the enchiladas.
10. Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
