Cajun Mushroom and Tofu Etouffee

- 1 block of firm tofu, drained and pressed
- 2 tablespoons of olive oil
- 1 onion, diced
- 1 green bell pepper, diced

- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 8 ounces of sliced mushrooms
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- Cooked rice, for serving
To make this dish, start by pressing the tofu to remove any excess water. Cut the tofu into small cubes and set aside. In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic, paprika, thyme, cayenne pepper, salt, and black pepper and cook for another minute.
Add the diced tomatoes and vegetable broth to the skillet and bring to a simmer. Add the sliced mushrooms and tofu and stir to combine. Cover the skillet and let the mixture simmer for 10-15 minutes, or until the mushrooms are tender and the tofu is heated through.
In a small bowl, whisk together the cornstarch and water. Add the mixture to the skillet and stir to combine. Let the mixture simmer for another 5 minutes, or until the sauce has thickened.
