Bigos with Beef

2. Add the onion and garlic to the pot and cook until softened, about 3 minutes.
3. Add the carrots, celery, and red bell pepper to the pot and cook for another 5 minutes.
4. Add the sauerkraut, beef broth, tomato sauce, paprika, caraway seeds, salt, and pepper to the pot. Stir to combine.
5. Bring the mixture to a boil, then reduce the heat to low and simmer for 1-2 hours, stirring occasionally, until the beef is tender and the flavors have melded together.
