Ingredients (per serving):

- 1 cup cooked rice
- 1/2 cup sliced shiitake mushrooms

- 1/2 cup sliced zucchini
- 1/2 cup sliced bell peppers
- 1/2 cup bean sprouts
- 1/4 cup sliced scallions
- 1/4 cup sliced cucumber
- 1/4 cup sliced radish
- 1/4 cup kimchi
- 1 egg
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 teaspoon sugar
- Salt and pepper to taste


Instructions:

1. Cook rice according to package instructions and set aside.
2. In a pan, heat sesame oil over medium-high heat. Add shiitake mushrooms and cook for 2-3 minutes until they start to brown. Add carrots, zucchini, and bell peppers and cook for another 2-3 minutes until they are tender. Season with salt and pepper to taste.
3. In a separate pan, blanch bean sprouts in boiling water for 1-2 minutes until they are slightly cooked but still crunchy. Drain and set aside.
4. In a small bowl, mix soy sauce, gochujang, and sugar to make the sauce.
5. In a non-stick pan, fry an egg sunny-side up.
6. To assemble the bibimbap, place cooked rice in a bowl. Arrange the cooked vegetables, blanched bean sprouts, sliced scallions, cucumber, and radish on top of the rice. Add a spoonful of kimchi and the fried egg on top. Drizzle the sauce over the vegetables and egg.
7. Mix everything together before eating.
