Greek Veggie Feast

Ingredients:

- 1 can of chickpeas, drained and rinsed
- 1/4 cup of tahini
- 2 cloves of garlic, minced
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions:

1. Preheat the oven to 400°F.
2. In a large bowl, combine the eggplant, zucchinis, red and yellow bell peppers, olive oil, garlic, oregano, salt, and pepper. Toss to coat the vegetables evenly.
