For the Greek Salad:

- 1/2 cup of Kalamata olives, pitted
- 1/2 cup of crumbled feta cheese
- 2 tablespoons of olive oil
- 1 tablespoon of red wine vinegar

Instructions:

1. To make the falafel, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper in a food processor. Pulse until the mixture is well combined but still slightly chunky.
2. Transfer the mixture to a bowl and stir in the flour and baking powder. Mix well.
3. Heat the vegetable oil in a large skillet over medium-high heat. Using a small cookie scoop or spoon, form the falafel mixture into small balls and flatten slightly. Fry the falafel in the hot oil until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
4. To make the halloumi, heat the olive oil in a grill pan or skillet over medium-high heat. Add the halloumi slices and cook for 1-2 minutes per side, until golden brown and crispy.
5. To make the tahini dressing, whisk together the tahini, water, lemon juice, garlic, salt, and pepper in a small bowl until smooth.
6. To make the Greek salad, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, olive oil, red wine vinegar, salt, and pepper in a large bowl. Toss well.
7. To assemble the wraps, place a few falafel balls and halloumi slices on a warm tortilla. Top with the Greek salad and drizzle with the tahini dressing. Roll up the tortilla and serve.
