Ingredients:

For the crust:

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 egg yolk
- 2 tbsp ice water

For the filling:

- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 1 tbsp cornstarch
- 1 tsp vanilla extract
For the topping:

- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup fresh lemon juice
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
Instructions:

1. Preheat the oven to 350°F. In a large bowl, combine the flour, sugar, and salt. Add the butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
2. Add the egg yolk and ice water and mix until the dough comes together. Press the dough into a 9-inch tart pan and prick the bottom with a fork. Bake for 15-20 minutes, or until lightly golden brown. Let cool.
3. In a medium saucepan, combine the heavy cream, sugar, and mint leaves. Heat over medium heat until the sugar has dissolved and the mixture is hot but not boiling. Remove from heat and let steep for 10 minutes.
4. In a small bowl, whisk together the lemon juice, lime juice, orange juice, cornstarch, and vanilla extract. Add the mixture to the saucepan and whisk until smooth. Return the saucepan to medium heat and cook, whisking constantly, until the mixture thickens and coats the back of a spoon.
5. Pour the filling into the cooled crust and smooth the top. Refrigerate for at least 2 hours, or until set.
6. In a small saucepan, combine the mint leaves, orange juice, lime juice, lemon juice, sugar, and cornstarch. Cook over medium heat, whisking constantly, until the mixture thickens and becomes glossy.
7. Pour the topping over the chilled tart and spread evenly. Refrigerate for another 30 minutes, or until the topping is set.
8. Serve the Citrus Mint Tart chilled and garnished with fresh mint leaves.
